[Updated] Crispy Keto Cheese Crackers Recipe

While trawling the internet for easy, vegetarian friendly Low Carb Keto recipes like this one, I came across this gem. Even though I like to experiment with Low Carb Keto recipes, I have to admit that I am a super lazy cook and a lover of snacks! So the easier the recipe, the better, and I have never come across a simpler recipe than this one! It literally has ONE INGREDIENT!

These super easy crispy Keto Cheese Crackers are amazing and you can serve them to guests while entertaining, or stuff your face with while binge-watching TV series (my guilty indulgence!). The best part is that you can throw this together with very short notice and they’ll be done and delicious and ready to munch in no time!

Ingredients and Inspiration for Crispy Keto Cheese Crackers

So for this recipe, you will need: Cheese. Okay, more specifically, hard cheese. But, hey!

So your favourite, good quality hard cheese is almost all you need to create the yummiest low carb cheese crackers snack…and the variations to this scrumptious delight are limited only by your imagination.

This 1962 quote by former French President Charles de Gaulle is startling at first…until you become aware of the fact that there are currently almost 1600 varieties in France according to Wikipedia!!

So the question remains…which cheese? Well, this is entirely up to you and you could have fun trying out different varieties of hard cheese until you figure out which you prefer. Choose full fat hard cheese for your crispy keto crackers, and go ahead and use 2 or 3 different varieties in the same batch.

My favourite hard cheeses are gouda, emmental and mature cheddar. My indulgence is Red Fox Full Fat Hard Cheese available from Woolworths.

How to prepare Low Carb Cheese Crackers

  1. Preheat your oven to around 200°C / 390°F
  2. Slice your cheese into thin, even square or rectangular slices and arrange the slices on a sheet of baking paper on a baking tray with about an inch of space between the slices
  3. Grill until the cheese melts and browns slightly (mine took 8 minutes on the top shelf)
  4. Remove from the oven and allow to cool completely. This is the hard part because you know they are gonna taste amazing, but you gotta wait!
  5. Eat and enjoy!
