Unfortunately it is so easy to fall back into the habit of snacking on high carb, sugar laden foods when we are craving something crunchy…so it was imperative that I find alternatives…you know, to keep me sane…

It’s refreshing and crunchy low carb snacking celery

Celery is a fantastic fresh veggie! Because of it’s crunchiness, fiber and high water content, celery can make you feel fuller for longer. It is best eaten raw to preserve the nutrients which have been credited with easing bloating, inflammation, high stress levels (wow!), high blood pressure, and some studies have even shown a benefit for cancer sufferers. It’s also a great source of vitamins K, A and potassium and has some traces of vitamin C too.

So go on and put some crunch back in your diet with this delicious low carb snacking celery recipe… Well, here it is:

Here’s what you will need

  • fresh celery
  • salt (I used Himalayan salt)
  • black pepper in a grinder
  • extra virgin olive oil

Prep the celery

Always wash your celery thoroughly before use. It’s best to eat your celery freshly chopped. I found this great article on how to prepare celery on Seriouseats.com. They have fantastic tips on how to to cut celery. You can cut and trim the celery any way you like.

Once you have prepped your celery, you can proceed to the next (and easiest) part…

Plate, garnish and enjoy your low carb snacking celery

You can serve your low carb snacking celery on a plate or in a bowl

  • pour the extra virgin olive oil over the celery
  • grind the salt and pepper over celery

Serve and enjoy!
